Quick and Healthy Lunch Idea

Are you looking for an easy (Paleo) lunch idea to keep you from grabbing an expensive, not-so-healthy lunch out? Jessica’s lunch staple is chicken salad paired with Simple Mills almond crackers! Easy Chicken Salad


  • Rotisserie chicken, shredded
  • Primal Kitchen Mayo
  • Celery, diced
  • Onion, diced
  • Apple, diced (or grapes/raisins)
  • Salt and pepper if desired

Optional changes: replacing apple with grapes or raisins, changing the seasoning, adding walnuts.

Mix it all together and enjoy with crackers or even make it a lettuce wrap or stuff it in half of an avocado.
