Paleo Egg Roll in a Bowl

Are you looking for an easy and relatively healthy meal for when you’re in a pinch? We love making this Paleo egg roll in a bowl over here. You can grab pre-packaged cabbage mix and julienned carrots to make it easier, and if you’ve never tried the frozen crushed ginger cubes, you’re totally missing out. You can find them at Target or H-E-B in the frozen foods section.

Ingredients:
Sesame Oil
Diced Garlic
Ground meat – pork or beef will do
Shredded Cabbage (2-3 bags)
Julienned carrots
Crushed ginger
Coconut aminos
Green onions
Sesame seeds

Instructions:

  1. Saute the garlic and ginger in the sesame oil on medium heat.
  2. When the garlic becomes fragrant (this only take a couple minutes), brown the meat with the garlic/ginger.
  3. After the meat is cooked thoroughly, add the cabbage and carrots. After that cooks down (and the cabbage is soft), pour coconut aminos over the entire dish to taste.
  4. Garnish with the green onions and sesame seeds.
